Easy Dinner: Crock Pot Style

I really enjoy cooking–I love that sense of accomplishment when something you created with what you have in your fridge is a huge hit! I don’t have a lot of time, but I can’t stand bland food, so everything I make is easy, but tasty! Also note, I don’t do well following a recipe. Everything I cook, I typically just throw together to taste. Note that below is all approximate:)

Tonight’s Dinner: Apple/BBQ Pork, Balsamic Roasted Potatoes, Carrots and Onions, and Asparagus.

This morning I took a chunk (about a 2-person serving size) of pork tenderloin out of the freezer and put it in the crock pot on low with a cup of applesauce, and a half a cup of bbq sauce (I really like making my own bbq sauce, I’ll share that recipe later), but this morning I had Trader Joes bbq sauce in my fridge that needed to be used! A couple times in the later afternoon, I took a spoon and stirred the sauce together, turned the pork, and covered with sauce.

About an hour before I wanted us to eat dinner, I preheated the oven to 400 degrees. After spraying a glass baking pan with olive oil cooking spray, I took two potatoes, washed and cut into chunks and placed in the dish.  Next, I quartered 1 carrot, and then quartered those quarters, and placed the slivers in with the potatoes. I cubed a yellow onion and put cubes into the same dish. Finally, I sprinkled everything with about a tablespoon of olive oil and mixed. Then I sprinkled with about 2-3 tablespoons of balsamic vinegar and mixed. And of course, added my staple: Johny’s Seasoning Salt (about a tsp). You could also use Spike–another great all-purpose seasoning.  I put the dish in the oven, and re-mixed everything a couple of times, cooking until the potatoes were soft.

Approximately 20 minutes before the potatoes were roasted, I put asparagus in a steamer with a drizzle of olive oil, garlic powder, and Johny’s Seasoning Salt. And steamed on medium heat.

Everything turned out really well! The pork was an experiment, and was awesome! I’ll definitely try that again–so super easy! When I pulled the pork out of the crock pot and dished onto plates, I scoped the remaining sauce and put on top of the meat–very tasty!

Tonight, Lee was off the hook with a salad! It’s a typical must-have, even though he’s not a huge fan, but I skipped tonight in lieu of the asparagus and roasted carrots.
